Welsh Rarebit

Ingredients

225g Mature Welsh Cheddar

25g Salted Butter (melted)

1 tbsp Worcestershire Sauce

1 tbsp Mustard

1 tbsp Plain Flour

4 tbsp Welsh Beer

Black Ground Pepper

4 Slices of Thick Cut Bread

 

Method

  1. Grate the cheese and mix into a saucepan along with the butter, Worcestershire sauce, mustard, flour and pepper
  2. Mix well over a gentle heat and add in the beer slowly to keep the consistency paste like, once all incorporated remove from the heat
  3. Toast the bread on one side and then spread the cheese mixture on the untoasted side and gently grill until the topping is cooked through and browning
  4. Enjoy as a snack or light meal accompanied with a Welsh Beer
